Exotic sweet balls, which taste will surprise you and guests. It is made from one of the common
ingredients which you can find in most Baltic kitchens – semolina.
‘Rava’ is the Indian term for semolina & ‘laddu’ means sweet balls.
Ingredients
• 1½ cup semolina
• 2 tablespoon cashew nuts
• 2 tablespoon raisins
• 2 tablespoons of coconut (grated)
• 1 cup sugar
• ½ cup water
• ½ teaspoon cardamom powder
• 1 tablespoon of ghee or butter
First, heat ghee or butter and add semolina in a frying pan. Roast on low flame until semolina turns aromatic. Make sure not to roast on high flame as it changes the colour of semolina. Now add coconut and roast for another 2 minutes. Keep aside.
Now take sugar and water in a different saucepan and stir while boiling until sugar syrup consistency is reached. Turn off the flame and add roasted semolina. Make sure to turn off the flame, else the laddu will turn hard. Keep stirring until the semolina is well combined with sugar syrup and keep aside for 2 minutes.
Meanwhile roast broken pieces of cashew nuts and raisins until it turns golden brown, add cardamom powder and mix & stir it into the semolina. Start preparing the balls immediately as it will harden once cooled. Enjoy rava laddu for a week when stored in an airtight container.
