This is a very easy, quick and healthy vegetarian dish with cabbage and potatoes.
It can be served with boiled rice as well as Indian breads such as chapatti or naan.
Ingredients
• 3 tablespoons of any cooking oil
• 1 big onion, thinly sliced
• 1-2 tablespoons of curry powder or garam masala powder
• 1 teaspoon of cumin seeds
• 1 teaspoon of turmeric powder
• 2 large clean potatoes, wash them and diced into tiny or small cubes as you wish
• ½ small clean green cabbage and very thinly sliced (but 3-5 cms long)
• 3 fresh tomatoes, nicely chopped
• 1-2 tablespoons of chopped coriander leaves
• ½ teaspoon of salt and pepper - to taste
Heat the oil in a big saucepan and fry the onions well, until golden colour. Add cumin seeds, green chillies and stir well. Add sliced cabbage and little bit of salt. Fry/stir well for 5-7 minutes on a medium heat.
After cabbage softens, add chopped potatoes, nicely chopped tomatoes, all the spices and add 1-2 cups of water. Cover with a lid and let it simmer for 20-30 minutes until potatoes and cabbage are cooked. Stir occasionally couple of times, to check if it is not sticking to the bottom of the pan. If sticks, add couple of tablespoons of water till nicely cooked like a fry or a thick curry as you wish. Once cooked, add chopped coriander leaves.
