Very easy and tasty starter dish from boiled and fried chickpeas.
Suitable as a snack during parties as well as for every day nutritious part of the meal.
Ingredients
• 2 cups of chickpeas (boiled or canned/unsalted). If chickpeas dried, then wash and soak in a bowl with water for 3 hours
• 2 teaspoons of any cooking oil
• 1 large onion, thinly chopped
• 4 cloves of garlic, nicely chopped
• 2 teaspoons of turmeric powder
• 1 teaspoon of chilli powder or curry powder
• 1 teaspoon of salt
• Sprinkle of fresh coriander leaves to your liking, thinly chopped
Soak chickpeas for 3 hours and then cook with water on slow flame for 10 minutes. Alternatively, use canned chickpeas (unsalted). Heat 2 teaspoons of oil in a frying pan and add finely chopped onions. Stir well. After onions turn golden in colour, add garlic and stir well for another 1 minute. Add turmeric powder, chilli or curry powder and salt, and fry another few minutes. Add cooked and ‘drained’ chickpeas to the frying pan and stir well for 3-5 minutes until chickpeas are nicely coated in spices. Serve with a sprinkle of coriander leaves, as a starter or evening snack.
